When Michael Paladini, a friend of the Bottle Shop, teamed up with his life-long friend and childhood next door neighbor, Danny Polise to make a whiskey, we knew right away we were interested. Penelope is a local, New Jersey-based brand, headquartered in Rumson, NJ, crafting high quality Bourbon made from four grain straight Kentucky mash. Aged in American white oak barrels, the first batch, #1 consisted of 1900 bottles, 80 proof. Named after Mike's daughter, Penelope is winning awards for its balanced, flavorful style. Look for aromas of cream, butterscotch, hints of spice, smoke and mint. On the smooth palate, sweet cream, roasted nuts and tangerine citrus come through with ripe pear, orange zest and spice on the finish. This is a crowd-pleasing style, for both Bourbon aficionado's and folks who are new to drinking Bourbon. Penelope’s taste profile is heavily reliant on the Wheat and Rye grains being uniquely aged separately with corn/barley grains in new charred American Oak barrels to maximize flavor. Penelope Bourbon is non-chill filtered.

KENTUCKY MULE
INGREDIENTS
2 oz Penelope Bourbon
.5 oz fresh lime juice
Ginger Beer
1 lime wedge
PREPARATION
Pour Penelope Bourbon and lime juice into copper mug or a highball glass. Fill the mug or glass with ice and top with ginger beer. Garnish with a lime wedge.

1.5 oz. Penelope Bourbon
1/2 Lime
Club Soda
Glassware: Rocks or Highball
PREPARATION
Squeeze half a lime into a highball. Fill the glass with ice, add the bourbon, and top with club soda. Stir and serve. Garnish with lime.
